We knew a Palo Cortado cask would enhance our Caol Ila, but this surpassed expectations. The nose reveals fruity smokiness, exotic fruit, ripe pear, walnuts, and a hint of bacon, with fresh green apple peel adding a Caol Ila signature. The palate offers a silky balance of raisins, sugar syrup, cinnamon, and Indian cake. Perfectly integrated alcohol elevates the experience, while the finish is lively with burning birch wood, fruity peat, green apple, lime, and sherry. A rich, complex, unforgettable whisky.
